Tortellini & Ham Soup
Ingredients:
1 tbsp olive oil
1/2 cup ham, cubed
1/4 cup onions, chopped (optional)
1 minced garlic clove (optional)
1/2 tsp dried basil leaves
1 can cream of celery soup
1 cup frozen peas
1 soup can of milk
2 tbsp chopped fresh parsley
1/8 tsp pepper
2 cups hot cooked tortellini pasta
Directions:
- In 2-quart saucepan over medium heat, in hot oil, cook ham, onion, garlic, and basil for 2 minutes. Stir often.
- Stir in soup and peas, heat to boiling. Reduce heat to low and cover; cook 5 minutes or until peas are tender.
- Stir in milk, parsley and pepper; heat through. In large bowl, pour soup mixture over tortellini; toss lightly to coat. Serve with cheese (if desired).**
