Coconut Macaroons
Another recipe from my grandma Leach. Mmm…
Ingredients:
3 egg whites – stiffly beaten
1 cup sugar
1 tbsp corn starch or 2 tbsp flour
1/4 tsp salt
2 cups coconuts
1/2 tsp almond extract
Directions:
- Preheat oven to 350 degrees F. In the top of a double broiler, combine egg whites, sugar and cornstarch (flour). Cook over boiling water, stirring constantly, 20 minutes. Remove from heat, add salt, coconut and almond extract.
- Mix well, drop by teaspoon ½ inch apart on cookie sheet. Bake for 20-25 minutes until lightly browned.
