Coconut Macaroons

Another recipe from my grandma Leach. Mmm…

3 egg whites – stiffly beaten
1 cup sugar
1 tbsp corn starch or 2 tbsp flour
1/4 tsp salt
2 cups coconuts
1/2 tsp almond extract


  1. Preheat oven to 350 degrees F. In the top of a double broiler, combine egg whites, sugar and cornstarch (flour). Cook over boiling water, stirring constantly, 20 minutes. Remove from heat, add salt, coconut and almond extract.
  2. Mix well, drop by teaspoon ВЅ inch apart on cookie sheet. Bake for 20-25 minutes until lightly browned.
