Cinnamon Coffee Cake

So the hubby found this recipe and requested that I make it (so he could take it to work). It is rather simple and quick. All of the hubby’s co-workers also just loved it (they’ve requested that I make 2 pans next time…and that next time is rather soon:-)). I added about 1/2 tablespoon of nutmeg to the mix and it was delicious! I am thinking that next time I make it, I might try the cake mix from scratch I have – and maybe add some cherry filling in the middle. Continue reading

Hearty Lasagna

This is a great simple recipe for lasagna. It is quick and delicious. By using the sausage instead of the traditional hamburger certainly added great spice to it! A few changes I made was that I added a little bit more of the 5-cheese blend in each layer. Also, I used whole milk ricotta cheese instead of part-skim. In the past, I have had the no boil noodles come out a little hard, so I cooked this for a totally of an hour instead of the 50 minutes and it came out perfect! Continue reading

This is a great addition to many meals! Ingredients 4 Large baking potatoes 1/4 tsp salt 1/4 tsp pepper Directions Preheat oven to 500 degrees. Spray two large cookie sheets with nonstick cooking spray. Scrub four (4) medium unpeeled baking potatoes (2 pounds) well, but do not peel. Cut each potato lengthwise into ¼ inch think slices, then cut each slice lengthwise into 1/4 inch wide sticks. Place potatoes in medium bowl and toss with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Continue reading

Red-Wine Flank Steak

This is *very* good. The hubby and I love this recipe, however, we generally only make it for special occasions due to the price of flank steak. However, the red-wine sauce gives the steak a simply delicious flavor. Crispy Chicken with Sweet & Spicy Dipping Sauce

The dipping sauce for this, we use Thai Sweet Chili Sauce. I am not a fan of hot sauces, however, this is not too hot, but just right. Plus it helps that it is a dipping sauce so you can adjust your intake if need by. Herbed Pork Roast

I have only made this 1 time, however, the hubby and I was very impressed. This is certainly a meal that will be repeated. Ingredients: 1-3/4 teaspoons sugar 1/2 teaspoon dried marjoram 1/2 teaspoon rubbed sage 1/4 teaspoon salt 1/8 teaspoon celery seed 1/8 teaspoon ground mustard 1/8 teaspoon pepper 1-1/2 pounds boneless pork loin roast Directions: Combine the first seven ingredients; rub over roast. Oven Fried Parmesan Chicken

This recipe has been a favorite of the hubby’s and mine for awhile now. However, the recipe originally calls for a 4 pound chicken – we usually just use 3 or 4 chicken breasts.
