Grandma’s Meatloaf

My grandmother’s recipe, this is a fairly quick and easy meatloaf to make and I typically always have the ingredients on hand. Ingredients: 1 lb Hamburger 1/2 cup ketchup 1/4 cup onions 3 eggs salt to taste pepper to taste about 2 cups instant oats or cracker crumbs Directions: Preheat oven to 350 degrees F. Mix together leaving cracker crumbs for last. Add enough cracker crumbs to thickness desired. Bake for 45 minutes or until meatloaf comes away from pan. Continue reading

Spicy Beef & Broccoli Stir-Fry

Talk about fabulous! I never knew stir-fry could be this easy. For some reason, I’ve always been hesitant to try and make a stir-fry. I’m not sure why, but the concept was always intimating, but I finally tried it with this recipe from the Pampered Chef and it was amazing. It only took me 30 minutes to make and everyone loved it. Seriously, Jesse and I are already thinking of making it again, but trying different foods to vary it up a little. Mini Cheeseburgers (aka Sliders)

A friend had made these recently for a party and she said they were a huge success, so I thought they would be great for Ian’s 2nd birthday party. They’ll be the perfect size for his little hands and the adults can enjoy them as well. However, since I haven’t made them before, I tried them out for dinner tonight and I didn’t get what I was expecting. Don’t get me wrong, the mini cheeseburgers (aka sliders) came out beautifully, but you really need to dice the onions finely and don’t add too many more. Continue reading

Country-Fried “Steaks” with Chipotle Gravy

I’ve been looking for something more to do with hamburger and I think I’ve found it. Supposedly, this recipe only takes about 28 minutes (it’s from the Pampered Chef 29 Minutes to Dinner Vol. 2), but it did take me a little longer to do. Granted, a lot of that had to do with me doing a few other things at the same time and not following the directions exactly. Hearty Lasagna

This is a great simple recipe for lasagna. It is quick and delicious. By using the sausage instead of the traditional hamburger certainly added great spice to it! A few changes I made was that I added a little bit more of the 5-cheese blend in each layer. Also, I used whole milk ricotta cheese instead of part-skim. In the past, I have had the no boil noodles come out a little hard, so I cooked this for a totally of an hour instead of the 50 minutes and it came out perfect! Continue reading

Red-Wine Flank Steak

This is *very* good. The hubby and I love this recipe, however, we generally only make it for special occasions due to the price of flank steak. However, the red-wine sauce gives the steak a simply delicious flavor.
