Sweet Potato Casserole

2010-07-16 Side Dish Jackie
Jesse really likes this recipe. It tends to be sweet, almost like a dessert, but doesn’t take away from the sweet potatoes. It is recommended that you use either 1 cup white sugar and 1/2 cup brown sugar or vice versa. Ingredients: 2 large (about 2lbs) sweet potatoes 1 cup sugar 1/2 cup brown sugar 1 stick (8 tbsp) softened butter or margarine 4 large eggs 1/2 cup buttermilk 1/2 cup milk Continue reading

Brandied Fruit

This just seems like a great way to continuously have fruit on hand. This is a recipe my grandmother used to make all the time and it was fabulous. is a delicious quick snack that gets more potent the longer it sits! (Thanks for sending this recipe, both mom and I have been looking for it because we’ve been wanting to make it again) Ingredients: 3/4 sugar 1 cup of peaches, canned and drained Continue reading

Pot Roast with Twisted Potatoes

2009-01-24 Meat Side Dish Jackie
Pot roast is such an easy meal to make since it requires little effort to get it going and it cooks all day. The only problem we run into is what to do with all the veggies that are placed in the slow cooker to help flavor the beef. Usually, I serve them as a side dish, but no one tends to eat them. This time, I’m trying something a little different. Continue reading

French Fries

2008-10-21 Side Dish Jackie
Jesse wanted French fries tonight, so we looked up a couple different recipes and came up with our own. It’s not that hard once we figured out what the basics were and they came out pretty well. The first attempt at making these, we baked them at 400 degrees F. This did not work. They fries came out mushy and not that great. Most recipes called to cut the potatoes into wedges, but that’s not what we wanted, so we cut them into cubed strips. Continue reading

Grilled Corn on the Cob

2008-06-08 Side Dish Jackie
The weather has been getting hot lately, so Jesse and I have been looking for dinner meals that we don’t necessarily have to cook or anything we can throw on the grill. One thing we found that works beautifully….corn on the cob. It’s actually really easy. Wrap the ingredients in tin foil and stick it on the grill. Thirty minutes later and it’s done. We grilled a couple of ears last night along with a really nice cut of steak and dinner was a success. Continue reading
