Coconut Macaroons

Another recipe from my grandma Leach. Mmm… Ingredients: 3 egg whites – stiffly beaten 1 cup sugar 1 tbsp corn starch or 2 tbsp flour 1/4 tsp salt 2 cups coconuts 1/2 tsp almond extract Directions: Preheat oven to 350 degrees F. In the top of a double broiler, combine egg whites, sugar and cornstarch (flour). Cook over boiling water, stirring constantly, 20 minutes. Remove from heat, add salt, coconut and almond extract. Peanut Butter Balls

I am totally shocked that I haven’t posted this recipe yet. It comes from my Aunt Joann and it is fabulous. It is one of my all time favorite holiday recipes (which seems to be the only time anyone wants to make them) and combines two of my all time favorite ingredients – chocolate and peanut butter. We actually did try and make these when we did our holiday baking last season, but for some reason they didn’t come out right. Continue reading

Grandma Kate’s Peanut Butter Cookies

This was my Grandma Kate’s recipe. Ingredients: 1/2 cup brown sugar 1/2 cup white sugar 1/2 cup oleo 3/4 cup peanut butter 1/2 tsp vanilla 1 egg 1/2 tsp salt 1 tsp baking powder 1-1/2 cup flour Directions: Preheat oven to 375 degrees F. Mix all ingredients well – leaving flour the last ingredient to be mixed. Roll dough between hands forming a 1 inch ball, place on lightly greased cookie sheet. Continue reading

7 Layer Cookie

This is another recipe my Grandma Smith used to make quite a bit since it is really simple and deliciously sinful. Ingredients: 1/2 cup butter 1 cup crushed graham crackers 1 (8oz) pkg coconut 1 (8oz) pkg chocolate chips 1 (8oz) pkg butterscotch chips 1 cup chopped nuts 1 can sweetened milk Directions: Preheat oven to 350 degrees F. Melt the butter in a 9×13 pan. Spread one layer of ingredients on top of another as they are listed. Continue reading

Molasses Cookies

Another great recipe from my grandmother Leach. Ingredients: 1 cup sugar 1 cup shortening 1 cup molasses 1 tsp soda 1 cup boiling water 1 tsp ginger 1 tsp cinnamon 4 cups flour Directions: Preheat oven to 350 degrees F. Dissolved soda into boiling water. Mix all ingredients together, drop by spoonfuls on a cookie sheet, greased. Bake for 20 minutes or until down.

Brandied Fruit

This just seems like a great way to continuously have fruit on hand. This is a recipe my grandmother used to make all the time and it was fabulous. is a delicious quick snack that gets more potent the longer it sits! Ma’s Donuts

There is nothing better than homemade donuts except when they are made by your grandmother. Ingredients: 2 cup sugar salt nutmeg 4 tbsp melted butter 4 eggs 2 level tsp soda 2 cup buttermilk 3-1/2 cup flour Directions: Preheat deep fryer to 375 degrees F. Mix together soda and buttermilk. Cover the top of the sugar with nutmeg. Mix together. Add the rest of the ingredients and roll out dough 1/2 inch thick, cut with floured donut cutter or make donut balls. Continue reading
