Chocolate Scotcheroos

Ingredients:
1-1/2 cups creamy peanut butter
1 cup sugar
1 cup light corn syrup
6 cups rice krispies cereal
1 pkg semi-sweet chocolate chips
1 pkg butterscotch chips

Directions:

  1. Coat 13×9 baking pan with cooking spray (pam).
  2. Combine peanut butter, sugar and corn syrup in large saucepan.  Cook over medium-low heat, stirring frequently, until melted. remove from heat.   Add cereal; stir until thoroughly coated. Press onto bottom of prepared baking pan.
  3. In a microwave safe bowl, mix together 1/4 of a bag of the chocolate chips and butterscotch chips.  Melt together in the microwave.  Continue adding 1/4 of the chips in 10 to 20 seconds intervals, stirring until smooth.  Spread over cereal mix.
  4. Place in the refrigerator until well set (15 to 20 minutes or until the topping is firm).  Then can cut it into bars.

Makes: 30 bars

Variation: 1-2/3 cup of butterscotch chips and 1 cup of semi-sweet chocolate chips.
